If there’s one thing we all love, it’s Christmas baking. Am I right?
I recently asked my private coaching group on Facebook what their favourite holiday treat was. I would pick one and make a healthier version of it to enjoy, guilt-free.
The popular vote? Shortbread.
Cue the macro-friendly magic.
This recipe is gluten free if you use GF oats for the oat flour, and can be vegan if you use plant-based margarine instead of butter.
Ingredients
- ☝🏻First mix:
- 🔸2 TBSP softened margarine or butter (28g).
- 🔸1 TBSP coconut oil (15g).
- 🔸1 tsp sugar (8-10g).
- 🔸1 TBSP stevia or powdered sweetener (optional to just use sugar).
- 🔸1/4 tsp vanilla.
- 🔸A couple squirts of Liquid stevia to taste- depending how sweet you like them.
- ✌🏼Then add:
- 🔹1 cup oat flour (95g).
- 🔹1 pinch of salt.
- 🔹1/8 tsp baking soda.
Instructions
- ✔️Mix all the first ingredients together before adding the flour, salt, and BS.
- ✔️Roll it out into desired thickness and cut out into shapes (I’m boring so circles it is!).
- ✔️Bake at 325F for 5-6 mins if the cookies are only 1-inch diameter. You’ll have to watch them depending on how thick and big you make your cookies. Take them out when the bottoms have JUST started to turn golden brown!
Notes
This recipe is SMALL- it only makes about 8-10 cookies. If you want a bigger batch, triple it.
